Hmm, where to start. Well, after graduation, I started college at the College of Southern Idaho and never really left. My life has had its ups and downs, but I take it all one day at a time. In the early summer of 2001, my grandma flew me to Salem, Ohio to stay with her for a week and took me to Amish country and to Niagara Falls, Canada while I was there. That was my first time being out of the U.S. It was beautiful back there and would really like to go back sometime soon. Shortly after I got back, I went back to CSI and finished up my Associates in Liberal Arts then went and got an Associate’s degree in Para education. After that, I tried and tried looking for a para education job, but I didn’t have enough experience for any of them. While still trying to find a job with the schools, I started working for A+ Solutions working with kids who have developmental delays and behavioral problems. After about 1yr. of that, I finally settled for a Substitute teaching job with the Cassia County School District. After I started substitute teaching, I started to kind of enjoy teaching so back to CSI I went. This time I decided to teach Secondary Education History, since I love history, and it only took me a couple of semesters to finish up with an Associate’s degree in that. However, as it turns out my U.S. History instructor, who graduated from Minico, had it in for us Burley students. I survived his class with a little extra knowledge of what I was getting myself into. As it turns out the schools in our area won’t hire female History teachers unless they can coach or teach another subject on the side. I don’t do both, so after another year of substitute teaching, I decided it was best for me to get out of the teaching business and pursue something in an area that I love doing. Last June I finally made my decision and followed my heart into the Culinary Arts program at CSI. I do love to cook and learn to cook all different kinds of food. Then just before school started, I got a phone call from Mike Johnson my advisor/instructor asking me if I would like to join the new Baking and Pastries program to make room for all of the BSU and ISU culinary students since they closed down their programs. I said sure, why not, I am up for anything. However, all of those BSU and ISU students that were supposed to be coming, we only received 1 from each school and the student from ISU happened to be a 2nd yr. Culinary/Baking and Pastries student. So that is how I got into the Baking and Pastries program. I will soon have a Technical Certificate in Baking and Pastries come Aug(when it comes in the mail). I can now make anything from Quiche Lorraine to Poached Pears in Merlot to Vegan Tapioca Pudding.
Yes, I really did help make what is on this table from scratch.

I can even make some bread like Baguette, Fougasse, and my favorite Croissants.
In the fall I will be going back to school and this time it will be in the culinary class. I will be learning to make things from Stuffed Pork Tenderloin with Heir Covert and fingerling potatoes to Orange and Soy Glazed Chicken with Shitake Mushroom stuffing accompanied by Jasmine rice and braised baby bok choy to Vegan Sheppard’s Pie. Along with many other wonderful recipes I got to try out this past year. I am also hoping to move to Twin Falls to be closer to school and friends along with a job in the restaurant business. While doing all of this, I was also voted in as Secretary of my Hospitality Management Association (HOSTUER’S) Club.

Our club hosts an Italian Buffet in the fall and provides wonderful food for the Harvest Fest held in early November. We do a couple of other events also. With all of the money we bring in and hours we volunteer, we put it all together and go on culinary trips. In March of this year for Spring Break, 25 of us hopped on one of CSI’s buses at 6:00 a.m. on March 11 and headed for Portland, OR. Where we stayed in Downtown at a very nice hotel until March 15 then headed for Bend where we stayed the night and came home the next day. Next spring our trip will be to Vegas then at the end of my 1st yr. some of us that have enough money and want to will head to Spain for a couple of weeks, hopefully. If you want you can check out my blog, but I warn you that I don’t update it much. Plus, it might be boring to some of you, who knows.
While in Alaska, I have taught dance, group fitness, taken college classes, taken up snowshoeing, canoeing and other outside activities to enjoy the “ Land of the Midnight Sun”… I have also worked at the University of Alaska Anchorage as an administrative assistant for the past four years.
Although good ol’ BHS helped me earn 50 college credits prior to entering college, it still took me 7 ½ years to complete a “4 yr” degree. I majored in Zoology and minored in Spanish at Idaho State Univ. Ever since elementary school I’ve been interested in the health professions and loved looking at optical illusions and Magic Eye 3-D pictures. I am color-blind and wear some pretty thick glasses so I decided to save some money on my visual needs while pursuing these interests by studying optometry in Memphis (free glasses and contact lenses in optometry school!) I plan to leave the South and return to the West after finishing this degree (2012).
Between 2003-2005, I moved to southern Texas to spend a couple of years as a missionary. Ironically, it was the only time in my life I’ve been offered alcohol or marijuana. It was also the only time I’ve been able to completely forget about my own desires and really learn the meaning of the phrase “whosoever will lose his life for my sake shall find it.”
Five years ago, my high school sweetheart (Kiley Jones) and I were hitched in the Salt Lake City Temple. Exactly two years later I had a dream that I was holding a little girl named “Kinsley” in my arms—she was born in the summer of ’08. Our little family of 3 ½ (next baby is due in Sept) enjoys swimming pools, visiting family, and travelling. Although Tijuana Mexico is the only foreign land we’ve visited, several US sites such as DC, Hawaii, Yosemite, and New Orleans have provided us with fond memories and beautiful pictures. Most of our site-seeing trips were a result of selling home security door-to-door in Virginia, Colorado, and Nevada—which is also why ½ my wardrobe and all my windows say “APX Alarm” on them.
I’m grateful for the experiences I’ve had as a missionary in Texas, as a father and husband in Memphis, and as a Bobcat in Burley.
I really look forward to seeing old friends!
